The delights of rare cuts made possible by purchasing the whole animal

Our shop's signature is the reservation-only "Maboroshi no Karubi" (Phantom Kalbi). We lavishly use the highest-grade Hiuchi to create a flavor you can only encounter at this restaurant. Because we purchase whole animals, we can offer a lineup of rare cuts—of course the staples like loin and kalbi, but also a wide range of cuts that will make connoisseurs sigh with delight. Charcoal on a shichirin grill and the far-infrared heat of magma stone lock in the umami, finishing the outside pleasantly charred and the inside juicy. Hand-prepared kimchi and namul, homemade sauces and salad dressings further enhance the meat's deliciousness, and to finish, a cool, refreshing cold noodle (reimen) completes the lingering aftertaste.
